Oven Roasted Corn on the Cob

Ingredients (for 4 servings):

  • 4 ears of corn, husked
  • 2 tbsp olive oil or melted butter
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp smoked paprika (optional)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 tbsp chopped fresh parsley or cilantro for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. Place the corn on the prepared baking sheet. Brush each ear evenly with olive oil or melted butter. Sprinkle with salt, pepper, and smoked paprika if using.
  3. Roast the corn in the oven for 20-25 min., turning once halfway through, until the kernels are tender and slightly caramelized.
  4. If desired, sprinkle the roasted corn with Parmesan cheese while it’s still hot. Garnish with fresh parsley or cilantro for a pop of color and added flavor.
