Sheet Pan Salmon and Vegetables

This one-pan salmon recipe gained popularity for being both healthy and hassle-free. Its vibrant citrus and garlic flavors paired with the convenience of sheet pan cooking made it a favorite among busy home cooks. Try swapping the potatoes and asparagus in this recipe for your favorite seasonal vegetables!

Ingredients (for 4 servings):

  • 4 salmon fillets (about 6 oz each)
  • 1 lb baby potatoes, halved
  • 1 lb asparagus, trimmed
  • 3 tbsp olive oil, divided
  • 3 garlic cloves, minced
  • 1 lemon, thinly sliced
  • 1 tbsp lemon juice
  • 1 tsp paprika
  • ½ tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • Fresh parsley, chopped (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a bowl, toss the halved baby potatoes with 1½ tbsp olive oil, 1 minced garlic clove, ½ tsp paprika, ¼ tsp salt, and a pinch of pepper. Spread on the baking sheet and roast for 15 min.
  3. While potatoes cook, pat salmon fillets dry. Drizzle with 1 tbsp olive oil and lemon juice, then sprinkle with paprika, oregano, remaining salt, and pepper.
  4. Remove the baking sheet from the oven. Push potatoes to one side and add the salmon fillets and asparagus. Toss the asparagus with the remaining olive oil and minced garlic. Top salmon with lemon slices.
  5. Return the tray to the oven and bake for 12-15 min., or until salmon is opaque and flakes easily with a fork, and the asparagus is tender.
  6. Garnish with fresh parsley, if desired, and serve warm with extra lemon wedges.
