Cucumber Mint Cooler

Refreshing and invigorating, this mocktail combines the crispness of cucumber with the vibrant flavor of fresh mint and zesty lime. Topped with sparkling soda water, it’s a light, hydrating drink perfect for unwinding or serving at any gathering. With its natural ingredients and bright flavors, it’s an excellent choice for enjoying Dry January or any time you crave a revitalizing beverage.

Ingredients (serves 1):

  • 4–5 slices of cucumber, plus extra for garnish
  • 4 fresh mint leaves, plus a sprig for garnish
  • 1 oz fresh lime juice (about 1 lime)
  • 1/2 oz simple syrup (or honey syrup for natural sweetness)*
  • 4 oz soda water, chilled
  • Ice cubes

Instructions:

  1. In a glass, gently muddle the cucumber slices and mint leaves to release their flavors. For a more pronounced cucumber flavor, let the muddled mixture sit for a few minutes before adding the other ingredients.
  2. Add the lime juice and simple syrup, stirring to combine.
  3. Fill the glass with ice cubes, then pour in the chilled soda water.
  4. Garnish with a sprig of mint and a cucumber slice for an elegant presentation.


*To make honey syrup, mix equal parts honey and warm water until fully combined.
