India: Egg Curry

In the land of curries, eggs are also a star ingredient. Egg curry is one of the most popular egg dishes in India, typically served with rice. It has all the rich flavors of a classic curry, with the addition of tender, boiled eggs.


Ingredients (serves 4):

  • 4 hard-boiled eggs
  • 1 tsp coconut oil
  • 1 tsp mustard seeds
  • 1 cinnamon stick
  • 3 cardamom pods
  • 5 peppercorns, lightly crushed
  • 2–3 green chilies, halved lengthwise
  • 1 tsp finely chopped ginger
  • 2 onions, finely diced
  • 7 garlic cloves, minced or finely chopped
  • 3 tomatoes, diced
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • 2 cups coconut milk
  • 8–10 curry leaves or curry powder to taste
  • Salt to taste

Instructions:

  1. Heat the coconut oil in a large pan. Add the mustard seeds, cinnamon stick, cardamom pods, peppercorns, and green chilies.
  2. Once the spices begin to sizzle, add the chopped ginger, diced onions, and minced garlic. Sauté until the onions are soft and translucent.
  3. Add the diced tomatoes, turmeric powder, coriander powder, chili powder, and salt. Cook for 6–8 minutes, stirring occasionally, until the tomatoes soften and form a thick paste.
  4. Pour in the coconut milk and stir well. Bring the mixture to a gentle boil, then simmer for about 5 minutes, allowing the curry to thicken slightly.
  5. Add the curry leaves or curry powder and stir to incorporate. Adjust the seasoning as needed. Turn off the heat.
  6. Peel the hard-boiled eggs and make small slits in their surface to help them absorb the flavors of the curry. Gently place the eggs into the sauce and let them sit for a few minutes before serving.

Serve this rich and fragrant egg curry with steamed rice or flatbreads for a comforting, flavorful meal that captures the essence of Indian cuisine.

  5. Add 1 cup of shredded cheese

  7. Add a slice of salami, a tbsp of pizza sauce, and one raw egg to each ramekin
  8. Top with cheese and return to oven for 7 min at 375°F
  9. Serve, and enjoy!
