The Spanish tortilla, or tortilla de patatas, is a simple yet iconic dish that’s beloved across Spain. Made with just a few basic ingredients—potatoes, eggs, onion, olive oil, and salt—this thick potato omelet is versatile enough to be enjoyed as a tapas, a light lunch, or even a hearty breakfast.


Ingredients (serves 4):

  • 5 medium potatoes, peeled and thinly sliced
  • 1 medium onion, thinly sliced
  • 6 large eggs
  • 1 cup olive oil (for frying)
  • Salt to taste

Instructions:

  1. Heat the olive oil in a large frying pan over medium heat. Add the sliced potatoes and onions, ensuring they’re submerged in the oil. Cook gently for about 15–20 minutes, stirring occasionally, until the potatoes are tender but not browned. Remove from heat and drain the oil, reserving some for later use.
  2. In a large bowl, beat the eggs with a pinch of salt. Add the cooked potatoes and onions to the eggs and gently mix to combine, ensuring the potatoes are well-coated. Let the mixture sit for 5 minutes to allow the flavors to meld.
  3. Heat a small amount of the reserved oil in a non-stick frying pan over medium heat. Pour in the egg and potato mixture, spreading it evenly in the pan. Cook for about 6–8 minutes, shaking the pan occasionally to prevent sticking.
  4. Place a large plate or lid over the pan, carefully flip the tortilla onto the plate, then slide it back into the pan to cook the other side. Cook for another 4–5 minutes, or until the tortilla is golden and set but still slightly soft in the center.
  5. Slide the tortilla onto a serving plate and let it cool slightly before slicing into wedges. Serve warm or at room temperature with crusty bread and a fresh salad, or simply enjoy it on its own.
