Israel: Shakshuka

Shakshuka is a beloved Middle Eastern dish, especially popular in Israel. It's a delicious combination of poached eggs in a spicy tomato and pepper sauce, perfect for breakfast or any meal of the day.


Ingredients (serves 4):

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 3 garlic cloves, minced
  • 14 oz canned tomatoes, crushed or chopped
  • 2 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional, for heat)
  • Salt and pepper, to taste
  • 4-6 eggs
  • Fresh cilantro or parsley, chopped (for garnish)
  • Crumbled feta cheese (optional)
  • Warm pita bread, for serving

Instructions:

  1. Heat the olive oil in a large skillet or frying pan over medium heat. Add the chopped onion and red bell pepper, and sauté for about 5-7 minutes until softened.
  2. Add the minced garlic and cook for another minute, until fragrant.
  3. Stir in the crushed tomatoes, cumin, paprika, and cayenne pepper (if using). Season with salt and pepper. Let the sauce simmer on low heat for about 10-15 minutes, until the tomatoes break down and the sauce thickens slightly.
  4. Make small wells in the tomato sauce with a spoon, and crack the eggs into the wells. Cover the pan with a lid and cook for 5-8 minutes, or until the egg whites are set but the yolks are still runny. You can cook them longer if you prefer firmer yolks.
  5. Remove the pan from heat. Garnish with chopped cilantro or parsley, and sprinkle with crumbled feta cheese, if desired.
  6. Serve hot with warm pita bread for dipping. Enjoy your delicious shakshuka!

  8. Top with cheese and return to oven for 7 min at 375°F
  9. Serve, and enjoy!
