Korea: Bibimbap

Bibimbap is a beloved Korean dish that brings together a mix of rice, vegetables, and protein, topped with a perfectly cooked egg. Whether made with ground beef or tofu, this vibrant meal is as visually stunning as it is delicious.

 

Ingredients (serves 2):

  • 1 ¼ cups short grain white rice
  • 1 ½ cups water
  • 9 oz ground beef
  • 1 onion
  • 1 zucchini
  • 2 carrots
  • 4 oz fresh shiitake mushrooms
  • 1 garlic clove
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 2 tsp gochujang (Korean chili paste)
  • 2 eggs
  • Vegetable oil for cooking


Instructions:

  1. Rinse the rice several times in cold water until the water runs clear. Cook it according to package instructions in a pot or rice cooker.
  2. Place the ground beef in a bowl. Grate the garlic into the bowl, then add the soy sauce, sesame oil, and sugar. Mix well, cover, and set aside.
  3. Slice the shiitake mushrooms into pieces, peel and cut the carrots into thin strips, slice the zucchini into strips, leaving the skin on.
  4. Heat 1 tsp of oil in a wok or large frying pan. Sauté the zucchini for about 1 minute, then transfer it to a bowl. Repeat the process with the carrots, cooking for about 2 minutes, and then with the mushrooms and the sliced onion, transferring each to separate bowls after cooking.
  5. Heat another tsp of oil in the wok, then cook the marinated beef until fully browned. Transfer to a separate bowl.
  6. Divide the cooked rice evenly between two large serving bowls. Arrange the sautéed vegetables, mushrooms, and meat on top of the rice in neat sections.
  7. In a clean pan, fry the eggs sunny-side up in a little oil. Place one fried egg on top of each bowl.
  8. Add a spoonful of gochujang to each bowl. Adjust the amount according to your spice tolerance.

Serving Tip:
Mix everything together in the bowl before eating, breaking the egg yolk to coat the rice and vegetables. Bibimbap is best enjoyed with kimchi or other Korean side dishes. Enjoy!

  8. Top with cheese and return to oven for 7 min at 375°F
  9. Serve, and enjoy!
