Italy: Frittata

A frittata is an Italian-style omelette that's easy to prepare and incredibly versatile. It can be served for breakfast, lunch, or dinner and is perfect for using up leftover vegetables or meats.


Ingredients (serves 4):

  • 8 large eggs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 bell pepper, chopped
  • 1 zucchini, sliced
  • 1/2 cup cooked potatoes (optional)
  • Salt and pepper to taste
  • Fresh herbs (parsley, basil, or thyme) for garnish

Instructions:

  1. In a large bowl, whisk together the eggs, Parmesan cheese, milk, salt, and pepper until well combined.
  2. Heat the olive oil in a large skillet over medium heat. Add the chopped onion, bell pepper, and zucchini, and cook for about 5-7 minutes, until softened.
  3. If you're using cooked potatoes, add them to the skillet and cook for another 2 minutes, stirring occasionally.
  4. Pour the egg mixture into the skillet, ensuring that it covers the vegetables evenly. Reduce the heat to low and cook without stirring for about 10-12 minutes, until the edges begin to set.
  5. Once the edges are firm, use a spatula to lift them and allow the uncooked eggs to flow underneath. When the top is still slightly runny but almost set, place the skillet under a preheated broiler for 2-3 minutes to cook the top and lightly brown the frittata.
  6. Remove the frittata from the skillet and let it cool slightly. Slice and garnish with fresh herbs before serving.

Method

  1. Boil diced cauliflower in salted water until tender.
  2. Blend, then transfer to mixing bowl.
  3. Mix in 2 eggs, pepper and 2 cups of shredded cheese
  4. Share the cauliflower mixture out between 6 ramekins, forming little cups
  5. Add 1 cup of shredded cheese
  6. Bake for 25 min at 375°F
  7. Add a slice of salami, a tbsp of pizza sauce, and one raw egg to each ramekin
  8. Top with cheese and return to oven for 7 min at 375°F
  9. Serve, and enjoy!
