Poland: Deviled Eggs (Jajka Faszerowane)

Deviled eggs are a popular dish in Poland, often enhanced with extras like cooked ham. This variation is perfect for buffets or as a delightful snack.


Ingredients (serves 4):

  • 8 eggs
  • 3 handfuls parsley, finely chopped
  • 3 tbsp butter
  • 3 tbsp breadcrumbs
  • 2.5 oz cooked ham, sliced thick
  • 1 tsp mustard
  • 3 tbsp sour cream
  • Salt, pepper, and paprika for seasoning

Instructions:

  1. Boil the eggs in water for 8 minutes. Once done, cool them under cold running water and let them cool completely.
  2. Finely chop the parsley. Mix the butter with the parsley, breadcrumbs, and a pinch of salt.
  3. Finely dice the cooked ham.
  4. Peel the eggs, then slice them in half lengthwise. Remove the yolks and pass them through a fine sieve into a bowl.
  5. Stir in the mustard and sour cream. Season with salt, pepper, and a pinch of paprika. Add the diced ham and mix well.
  6. Transfer the filling into a piping bag with a small nozzle and pipe the yolk mixture into the egg halves.
  7. Preheat the oven to the broil setting or the top heat function. Arrange the egg halves in an ovenproof dish and sprinkle the breadcrumb mixture on top of each one.
  8. Broil in the oven for a few minutes until lightly golden and crispy.
  9. Arrange the stuffed eggs on a serving platter, sprinkle with paprika, and garnish with a bit of parsley. Serve immediately.

Tip: A side of endive salad pairs perfectly with these deviled eggs.

  • 1/2 cauliflower head
  • 8 eggs for cauliflower mix
  • Pepper
  • Salt
  • 4-6 cups shredded cheese
  • 6 slices salami
  • 6 tbsp pizza Sauce

 

Method

  1. Boil diced cauliflower in salted water until tender.
  2. Blend, then transfer to mixing bowl.
  3. Mix in 2 eggs, pepper and 2 cups of shredded cheese
  4. Share the cauliflower mixture out between 6 ramekins, forming little cups
  5. Add 1 cup of shredded cheese
  6. Bake for 25 min at 375°F
  7. Add a slice of salami, a tbsp of pizza sauce, and one raw egg to each ramekin
  8. Top with cheese and return to oven for 7 min at 375°F
  9. Serve, and enjoy!
