Germany: Pfannkuchen (Pancakes)

In Germany people love many types of egg dishes, but one that stands out, especially among children: the Pfannkuchen, also known as Eierkuchen in many regions. Unlike variants from other countries like France, Germans use a generous amount of eggs in the batter.


Ingredients (for 6-8 pancakes):

  • 3 eggs
  • 7 fl oz (about 3/4 cup) milk
  • 1 3/4 cups flour
  • 1 pinch of salt
  • Sunflower oil for frying

Instructions:

  1. Whisk together the eggs, milk, flour, and salt to form a smooth batter.
  2. Heat the oil in a pan until hot. Pour a ladleful of batter into the pan and cook the pancake over reduced heat on one side.
  3. Flip the pancake when the top side is set. The best way is to use a spatula to transfer it onto a plate and then slide it back into the pan with the uncooked side down.
  4. For a savory twist, add cheese or sausage to the pancake while cooking.
  5. Keep the cooked pancakes warm on a plate in the oven at 176°F (80°C).

Tip: Everyone can top their pancake as they like: jam, chocolate spread, sprinkles, cheese, or even salad. Whatever tastes good is allowed.

Ingredients

Makes 6

  • 1/2 cauliflower head
  • 8 eggs for cauliflower mix
  • Pepper
  • Salt
  • 4-6 cups shredded cheese
  • 6 slices salami
  • 6 tbsp pizza Sauce

 

Method

  1. Boil diced cauliflower in salted water until tender.
  2. Blend, then transfer to mixing bowl.
  3. Mix in 2 eggs, pepper and 2 cups of shredded cheese
  4. Share the cauliflower mixture out between 6 ramekins, forming little cups
  5. Add 1 cup of shredded cheese
  6. Bake for 25 min at 375°F
  7. Add a slice of salami, a tbsp of pizza sauce, and one raw egg to each ramekin
  8. Top with cheese and return to oven for 7 min at 375°F
  9. Serve, and enjoy!
