Portugal: Pudim de Ovos

Pudim de Ovos is a classic Portuguese dessert that is particularly creamy and sweet. This delicious pudding is made with a combination of eggs, sugar, and milk, and the liquid caramel gives it the final touch. Perfect for special occasions or simply as a sweet temptation!


Ingredients (serves 6-8):

  • 6 large eggs
  • 1 1/2 cups granulated sugar (for the pudding)
  • 2 cups whole milk
  • 1 cup granulated sugar (for the caramel)
  • 1/4 cup water

Instructions:

  1. Preheat your oven to 350°F.
  2. To make the caramel, combine 1 cup of granulated sugar and 1/4 cup of water in a saucepan. Cook over medium heat, stirring occasionally, until the sugar dissolves and turns a golden brown. Be careful not to burn it.
  3. Pour the caramel into a bundt cake pan or a pudding mold, tilting the pan to coat the bottom and sides evenly. Set aside to cool and harden.
  4. In a large bowl, whisk together the eggs and 1 1/2 cups of granulated sugar until well combined.
  5. Gradually add the milk, continuing to whisk until smooth.
  6. Pour the egg mixture into the caramel-coated pan.
  7. Place the pan in a larger baking dish and fill the larger dish with hot water until it reaches halfway up the sides of the pudding pan (this is a bain-marie or water bath).
  8. Bake in the preheated oven for about 50-60 minutes, or until a knife inserted into the center comes out clean.
  9. Remove the pudding from the oven and let it cool in the water bath for about 15 minutes. Then, remove the pudding pan from the water and let it cool completely at room temperature.
  10. Once cooled, refrigerate for at least 4 hours or overnight.
  11. To serve, run a knife around the edges of the pudding to loosen it, then invert it onto a serving plate. The caramel will flow over the top, creating a delicious sauce.

Tip: For an extra touch, you can add a teaspoon of vanilla extract to the egg mixture for added flavor.

  8. Top with cheese and return to oven for 7 min at 375°F
  9. Serve, and enjoy!
