Potato Pancakes

Leftover mashed potatoes get a delicious makeover in these crispy, cheesy pancakes. Blended with shredded cheese, green onions, and a hint of flour, they’re pan-fried to golden perfection. These savory cakes are perfect as a side dish, snack, or even a light meal. Try adding bacon or diced ham to the mixture for extra flavor!

Ingredients (for about 6 pancakes):

  • 2 cups leftover mashed potatoes
  • 1/2 cup shredded cheddar cheese (or your favorite cheese)
  • 2 green onions, finely chopped
  • 1/4 cup all-purpose flour (plus extra, if needed)
  • 1 large egg
  • 1/2 tsp garlic powder
  • 1/4 tsp salt (adjust based on the seasoning of your mashed potatoes)
  • 1/4 tsp black pepper
  • 2 tbsp vegetable oil (for frying)

Instructions:

  1. In a large mixing bowl, combine the mashed potatoes, shredded cheese, green onions, flour, egg, garlic powder, salt, and pepper. Mix until well combined. If the mixture feels too sticky, add a little more flour, 1 tbsp at a time.
  2. Divide the mixture into 6 equal portions. Roll each portion into a ball, then flatten into a pancake shape about 1/2-inch thick.
  3. In a large skillet, heat the vegetable oil over medium heat until shimmering.
  4. Place the pancakes in the skillet, leaving space between each one. Cook for 3–4 min. on each side, or until golden brown and crispy. Adjust the heat as needed to prevent burning.
  5. Transfer the cooked pancakes to a plate lined with paper towels to drain excess oil. Serve warm with sour cream, applesauce, or a dollop of Greek yogurt, if desired.
