Loaded Potato Skins

Crispy on the outside and gooey on the inside, these loaded potato skins take leftover baked potatoes to the next level. Stuffed with melted cheese, sour cream, and your choice of toppings—like crispy veggies or smoky bacon—they make an irresistible appetizer or snack that everyone will love! 

Ingredients (for 8 potato skins):

  • 4 medium baked potatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream (plus extra for serving)
  • 1/4 cup cooked bacon bits or sautéed diced vegetables (e.g., bell peppers, onions)
  • 2 green onions, sliced
  • 1 tbsp olive oil
  • 1/4 tsp garlic powder
  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Cut each baked potato in half lengthwise. Scoop out most of the potato flesh, leaving about 1/4 inch of potato around the skin. Save the scooped-out potato for another recipe, like mashed potatoes or soup.
  3. Brush the potato skins lightly with olive oil, and season with garlic powder, salt, and pepper. Place the skins on the prepared baking sheet, cut side down. Bake for 10 min to crisp up the edges.
  4. Flip the potato skins over and fill each with a sprinkle of cheese and your choice of bacon bits or sautéed vegetables. Return to the oven and bake for 10–12 min, or until the cheese is melted and bubbly.
  5. Remove the potato skins from the oven and top with a dollop of sour cream and a sprinkle of green onions.
  6. Serve warm as a snack, appetizer, or side dish. Pair with your favorite dipping sauces for extra flavor.

Method

  1. Boil the desired amount of small potatoes until tender.
