Homemade Gnocchi

Turn your leftover potatoes into tender, pillowy gnocchi for a versatile and comforting meal. These little potato dumplings are the perfect pair to your favorite sauce, from classic marinara to rich brown butter sage. To save time, try making the gnocchi ahead of time! Place the uncooked gnocchi on a floured tray, freeze until solid, and store in a freezer bag. Cook straight from frozen by adding an extra minute to the boiling time.

Ingredients (for 4 servings):

  • 2 cups leftover mashed or riced potatoes (room temperature)
  • 1 cup all-purpose flour, plus more for dusting
  • 1 egg, lightly beaten
  • 1/2 tsp salt
  • Optional: Pinch of nutmeg (for extra flavor)

Instructions:

  1. In a large bowl, mix the mashed potatoes with the beaten egg, salt, and nutmeg, if using. Gradually add the flour, mixing gently until a soft, slightly sticky dough forms. Be careful not to overmix to avoid tough gnocchi.
  2. Transfer the dough to a floured surface and divide it into 4 portions. Roll each portion into a long rope, about 3/4 inch thick. Cut the ropes into 1-inch pieces.
  3. For a classic look, gently press each piece against the back of a fork or gnocchi board to create ridges (optional).
  4. Bring a large pot of salted water to a boil. Drop the gnocchi into the water in batches to avoid overcrowding. When they float to the surface (about 2–3 min.), use a slotted spoon to remove them and transfer them to a plate.
  5. Toss the gnocchi with your choice of sauce and serve immediately.
