Potato and Egg Breakfast Hash

Transform your leftover roasted or boiled potatoes into a hearty, one-pan breakfast that’s as comforting as it is delicious. This potato and egg breakfast hash combines crispy golden potatoes with sautéed onions and peppers, topped with perfectly cooked eggs, turning them into a filling meal that’s perfect for breakfast or brunch! Try adding cooked bacon or breakfast sausage for added protein!

Ingredients (for 2 servings):

  • 2 cups diced leftover roasted or boiled potatoes
  • 1 small onion, diced
  • 1 small bell pepper, diced (any color)
  • 2 tbsp olive oil or butter
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • Salt and pepper, to taste
  • 4 large eggs
  • 2 tbsp chopped fresh parsley or chives (optional, for garnish)

Instructions:

  1. Heat the olive oil or butter in a large skillet over medium heat.
  2. Add the diced onion and bell pepper to the skillet. Cook for 3–4 min., stirring occasionally, until softened.
  3. Stir in the diced potatoes, smoked paprika, garlic powder, salt, and pepper. Spread the mixture into an even layer and let it cook undisturbed for 3–4 min. to crisp up the edges. Flip and cook for another 3–4 min. until golden and crispy.
  4. Using a spatula, create four small wells in the potato mixture. Crack an egg into each well. Cover the skillet and cook for 3–5 min,. or until the egg whites are set but the yolks remain runny (or cook longer for firmer yolks).
  5. Remove the skillet from the heat. Sprinkle with chopped parsley or chives, if desired. Serve hot, straight from the skillet, with toast or avocado on the side.

  1. Boil the desired amount of small potatoes until tender.
