Ingredients (serves 6-8):
Dough:
4 cups flour
1 cube yeast
a pinch of salt
a pinch of sugar
1 cup warm water
1 tbsp olive oil
Topping:
1/4 cup grated Gouda cheese
1 2/3cups tomato sauce
1/2 cup salami slices
1/2 cup sliced mozzarella cheese
Fresh basil for garnishing (to taste)
Instructions:
Place the flour in a bowl and crumble the yeast into a well in the center. Add the salt and sugar to the yeast, then pour a splash of the warm water.
Let the mixture sit for about 15 minutes, then add the remaining water and olive oil. Knead into a smooth dough. If necessary, add a bit more flour and let it rise for at least another hour.
Preheat the oven to 400°F. Line a baking sheet with parchment paper.
Roll out half of the dough on a lightly floured surface to a thin layer. Use the ring of a 20 cm (8-inch) springform pan to cut out two circles from the dough.
Place the two dough circles with some space between them on the prepared baking sheet and prick them multiple times with a fork. Pre-bake the dough circles in the preheated oven for about 6-7 minutes, then set aside.
Grease a 20 cm (8-inch) springform pan. Roll out the remaining dough into a large circle (about 12 inches in diameter) and line the form completely with the dough, pressing the 2.5-inch-high edge well.
Grate the Gouda and sprinkle about a quarter on the bottom of the dough-lined pan. Cover with 3–4 tbsp of tomato sauce and top with salami slices.
Place one of the pre-baked dough circles on top. Layer with tomato sauce, cheese, and salami, then place the second dough circle on top.
Slice the mozzarella and place half on the cake, then layer with tomato sauce, cheese, and the remaining mozzarella and salami slices.
Bake in the preheated oven for about 20-25 minutes until the cheese is melted and bubbly.
Tip: You can make more dough to bake a taller pizza cake and add your favorite toppings.
