Mini Sweet Potato Pizzas

These mini sweet potato pizzas are a delightful and healthy alternative to traditional pizza. Perfect for a snack or appetizer, they're packed with flavor and nutrients. Enjoy making and eating these delicious bites!


Ingredients (serves 4):

For the Mini Pizzas:

  • 2 large steamed sweet potatoes
  • 1 cup oat flour
  • 1/4 cup almond flour
  • 1 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1 pinch paprika
  • 3 tbsp water (or as needed)

For the Topping:

  • 1 jar pesto
  • 10 cherry tomatoes
  • 5 cups arugula (losely packed)
  • 3/4 cup pine nuts

Instructions:

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. Cut the steamed sweet potatoes into cubes, place them in a bowl, and mash them with a potato masher.
  3. Add the oat flour, almond flour, apple cider vinegar, dried basil, dried oregano, garlic powder, paprika, salt, and olive oil to the mashed sweet potatoes.
  4. Mix everything thoroughly until a homogeneous paste forms. If the mixture is too stiff, gradually add water, one tablespoon at a time, until it reaches a well-formed consistency.
  5. Form small walnut-sized balls from the mixture and place them on the prepared baking sheet. Flatten the balls with your fingers to create small, round discs that will serve as the base for the mini pizzas.
  6. Bake the sweet potato discs in the preheated oven for about 20 minutes or until they are firm and slightly golden.
  7. While the bases are baking, quarter the cherry tomatoes and wash the arugula.
  8. Once the bases are baked, remove them from the oven and let them cool slightly.
  9. Spread pesto on each sweet potato base.
  10. Top the mini pizzas with cherry tomatoes, arugula, and pine nuts. Drizzle with a bit of olive oil before serving.

  7. Break an egg into each pizza
  8. Top with sliced cherry tomatoes and a basil leaf
  9. Place in oven for another 15 mins at 355°F
  10. Garnish with parsley and a pinch of pepper
  11. Serve and enjoy!
