Mini Zucchini Pizzas

For delicious snacks with minimal effort, we can skip the pizza dough and just use zucchini rounds as the base for these cute and healthy mini pizzas.


Ingredients (serves 4):

  • 3 medium zucchinis
  • 2 mini salamis
  • 3 tbsp olives
  • 1 cup tomato sauce
  • 1 tbsp Italian herbs
  • 1 cup grated mozzarella
  • Salt and pepper to taste

Instructions:

  1. Wash the zucchinis and slice them into rounds. Slice the salami and olives into rings.
  2. Heat olive oil in a large skillet and sauté the zucchini slices for 1 minute on each side, seasoning with salt and pepper. Remove and place them on a baking sheet lined with parchment paper.
  3. Preheat the oven to 350°F.
  4. Season the zucchini slices with salt and pepper, spread tomato sauce over them, and top with Italian herbs, mozzarella, and salami.
  5. Bake in the oven for about 5 minutes, until the cheese is melted.

Ingredients

  • Pizza Dough (homemade or store bought)
  • Shredded cheese
  • Pizza sauce
  • Cured ham, shredded
  • 4 eggs
  • Cherry tomatoes
  • Fresh basil

Method

  1. Roll out the dough
  2. Use a small bowl to cut the dough into rounds
  3. Add shredded cheese
  4. Place in oven on an oven tray afr 10 min at 355°F
  5. Put each dough round into a ramekin
  6. Add 1 tbsp pizza sauce, a handful of shredded cured ham 
  7. Break an egg into each pizza
  8. Top with sliced cherry tomatoes and a basil leaf
  9. Place in oven for another 15 mins at 355°F
  10. Garnish with parsley and a pinch of pepper
  11. Serve and enjoy!
