Mexican Pizza

Put aside the usual toppings, and dig into this mouthwatering Mexican Pizza! Bursting with vibrant flavors and fresh ingredients, this fusion dish is a fiesta for your taste buds. Perfect for any occasion, this delightful variation is sure to impress and satisfy everyone at the table. Give it a try and prepare to be amazed!


Ingredients (serves 4):

  • 1 classic pizza dough (see above)
  • 3/4 cup salsa
  • Fajita or taco seasoning
  • 1 bell pepper
  • 1 onion
  • 3/4 cup canned corn
  • 1 1/2 cups shredded cooked chicken
  • 1 3/4 cups shredded mozzarella cheese
  • Fresh parsley, basil, or cilantro for garnish

Instructions:

  1. Preheat the oven to 400°F.
  2. Roll out the pizza dough on greased baking sheets and spread salsa over the base.
  3. Sprinkle fajita seasoning over the salsa.
  4. Slice the mozzarella and arrange it on top of the pizza.
  5. Wash, core, and dice the bell pepper. Peel and dice the onion. Distribute both along with the drained canned corn evenly over the pizza.
  6. Shred the cooked chicken and scatter it over the pizza.
  7. Bake the pizza for 12 to 15 minutes, or until the crust is golden and the cheese is bubbly.
  8. Garnish with fresh herbs like parsley, basil, or cilantro, and enjoy!

Ingredients

  • Pizza Dough (homemade or store bought)
  • Shredded cheese
  • Pizza sauce
  • Cured ham, shredded
  • 4 eggs
  • Cherry tomatoes
  • Fresh basil

Method

  1. Roll out the dough
  2. Use a small bowl to cut the dough into rounds
  3. Add shredded cheese
  4. Place in oven on an oven tray afr 10 min at 355°F
  5. Put each dough round into a ramekin
  6. Add 1 tbsp pizza sauce, a handful of shredded cured ham 
  7. Break an egg into each pizza
  8. Top with sliced cherry tomatoes and a basil leaf
  9. Place in oven for another 15 mins at 355°F
  10. Garnish with parsley and a pinch of pepper
  11. Serve and enjoy!
