Autumn Delight Pizza

Delight in the rich and comforting flavors of this autumn-inspired pizza, featuring a creamy pumpkin sauce and the smoky depth of gouda cheese. Caramelized onions add a sweet and savory touch that perfectly complements the seasonal ingredients.

Ingredients (serves 4):

For the pumpkin sauce:

  • 1 cup pumpkin puree
  • 2 cloves garlic, minced
  • 1/4 cup heavy cream
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cinnamon
  • Salt and pepper to taste

For the caramelized onions:

  • 2 large onions, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp brown sugar

For the pizza:

  • 1 pizza dough (store-bought or homemade)
  • 2 cups shredded gouda cheese
  • Fresh parsley leaves, for garnish (optional)

Instructions:

  1. In a medium saucepan over medium heat, combine pumpkin puree, minced garlic, heavy cream, nutmeg, and cinnamon.
  2. Stir until well combined and heated through. Season with salt and pepper to taste. Set aside.
  3. In a large skillet, heat olive oil over medium heat.
  4. Add the sliced onions and cook, stirring occasionally, until they become soft and golden brown, about 20-25 minutes.
  5. Add balsamic vinegar and brown sugar, stirring to combine. Cook for an additional 5 minutes until the onions are deeply caramelized. Remove from heat and set aside.
  6. Preheat the oven to 475°F.
  7. Roll out the pizza dough on a floured surface to your desired thickness.
  8. Transfer the dough to a baking sheet or a preheated pizza stone.
  9. Spread the pumpkin sauce evenly over the pizza dough, leaving a small border around the edges.
  10. Sprinkle shredded gouda cheese over the sauce.
  11. Evenly distribute the caramelized onions over the cheese.
  12. Bake in the preheated oven for 10-12 minutes, or until the crust is golden and the cheese is melted and bubbly.
  13. Remove from the oven and let the pizza cool for a few minutes.
  14. Garnish with fresh parsley if desired.
