Spaghetti Pizza

For those who can't decide between pasta and pizza, this recipe offers the best of both worlds.


Ingredients (serves 4):

  • 1 lb spaghetti
  • 1 onion
  • 1 clove garlic
  • 1 tbsp olive oil
  • 1 tsp tomato paste
  • 1 3/4 cups tomato purée
  • 1 tsp Italian herbs
  • 2 1/4 cups mozzarella, sliced
  • 1 cup pancetta, torn into pieces
  • 3 eggs
  • 2/3 cup milk
  • 1/2 cup grated Parmesan cheese
  • Optional: rosemary or basil for garnish
  • Salt and pepper to taste

Instructions:

  1. Cook the spaghetti according to the package instructions in salted water.
  2. Peel and finely dice the onion and garlic. Sauté them in a pot with olive oil until translucent. Briefly fry the tomato paste with them, then add the tomato purée. Let it reduce and season with herbs, salt, and pepper.
  3. Preheat the oven to 425°F. Line two baking sheets with parchment paper. Drain the mozzarella and cut it into slices, tear the pancetta into pieces.
  4. Whisk the eggs with milk and grated Parmesan cheese.
  5. Drain the spaghetti, let it drain well, and mix it into the egg-milk-cheese mixture. Form 4 pizzas on the baking sheets, spread the tomato sauce on top, and top with mozzarella and pancetta.
  6. Bake in the oven for about 15 to 20 minutes and garnish with rosemary or basil.

  • Pizza Dough (homemade or store bought)
  • Shredded cheese
  • Pizza sauce
  • Cured ham, shredded
  • 4 eggs
  • Cherry tomatoes
  • Fresh basil

Method

  1. Roll out the dough
  2. Use a small bowl to cut the dough into rounds
  3. Add shredded cheese
  4. Place in oven on an oven tray afr 10 min at 355°F
  5. Put each dough round into a ramekin
  6. Add 1 tbsp pizza sauce, a handful of shredded cured ham 
  7. Break an egg into each pizza
  8. Top with sliced cherry tomatoes and a basil leaf
  9. Place in oven for another 15 mins at 355°F
  10. Garnish with parsley and a pinch of pepper
  11. Serve and enjoy!
