Turkish Pizza (Lahmacun)

Ingredients (serves 4):

For the Dough:

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 1 tsp active dry yeast
  • 3/4 cup warm water
  • 1 tsp olive oil

For the Topping:

  • 1/2 lb ground lamb or beef
  • 1 onion, finely chopped
  • 1 bell pepper, finely chopped
  • 2 tomatoes, finely chopped
  • 1/2 cup fresh parsley, finely chopped
  • 2 tbsp tomato paste
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Lemon wedges, for serving

Instructions:

  1. In a small bowl, dissolve the sugar and yeast in warm water. Let it sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth and elastic.Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  4. In a large bowl, combine the ground meat, chopped onion, bell pepper, tomatoes, parsley, tomato paste, garlic, cumin, paprika, red pepper flakes (if using), salt, and pepper. Mix well until all ingredients are fully incorporated.
  5. Preheat your oven to 475°F and place a pizza stone or baking sheet inside to heat up.
  6. Divide the dough into 4 equal portions. Roll each portion out on a floured surface to a very thin circle or oval shape.
  7. Spread a thin layer of the meat mixture evenly over each dough circle.
  8. Carefully transfer the topped dough onto the preheated pizza stone or baking sheet. Bake for 8-10 minutes, or until the edges are crispy and the topping is cooked through.
  9. Repeat with the remaining dough and topping.
  10. Serve the Lahmacun hot, with lemon wedges on the side for squeezing over the top. Optionally, you can add a sprinkle of fresh parsley or a drizzle of olive oil for extra flavor. Enjoy!

  4. Place in oven on an oven tray afr 10 min at 355°F
  5. Put each dough round into a ramekin
  6. Add 1 tbsp pizza sauce, a handful of shredded cured ham 
  7. Break an egg into each pizza
  8. Top with sliced cherry tomatoes and a basil leaf
  9. Place in oven for another 15 mins at 355°F
  10. Garnish with parsley and a pinch of pepper
  11. Serve and enjoy!
