Crispy Pumpkin Seeds

When you prepare pumpkins, you often end up with pumpkin seeds. Don't throw them away! Instead, you can make a healthy snack that can be stored for a long time and tastes great in salads or muesli.

 

Ingredients:

  • Pumpkin seeds from any pumpkin
  • 2 tbsp olive oil
  • 1 pinch of salt

Instructions:

  1. Remove the pulp from the pumpkin seeds and wash the seeds thoroughly to remove all fibers.
  2. Let them dry on a kitchen towel for about a day.
  3. Add olive oil to a pan and sprinkle with salt.
  4. Add the pumpkin seeds and cover with a lid, then roast on high heat.
  5. The shells will pop open, revealing the inner seeds. Remove the pan from the heat once most of the shells have popped open. Repeat the process until all the seeds are done.
