A delightful and sophisticated dessert, Chocolate Mousse with Pomegranate offers a perfect blend of rich chocolate and fruity freshness. This luxurious twist on the classic chocolate mousse is ideal for special occasions or whenever you want to treat yourself and your loved ones to something extraordinary. Ingredients (serve 2):
1 pomegranate
2 tbsp cranberry juice
1/2 tsp cornstarch
3 tbsp sugar
1/2 cup dark chocolate couverture
1 egg
1/2 cup heavy cream
Decoration: grated chocolate of choice, mint leaves, and pomegranate seeds
Instructions:
Halve the pomegranate. Juice one half using a lemon squeezer. Combine the pomegranate juice with cranberry juice to make up 3 tbsp. Remove the seeds from the other half and discard the white membranes.
Mix the cornstarch with 2 tbsp of the juice until smooth. Bring the remaining juice and 1 tbsp sugar to a boil, then stir in the cornstarch mixture and let it simmer for about 1 minute. Allow the juice to cool. Reserve a few pomegranate seeds for decoration and add the rest to the juice mixture, stirring well. Let it cool completely.
For the mousse, coarsely chop the chocolate couverture and melt it over a hot water bath. Remove from heat and let it cool slightly. Beat the egg and 2 tbsp sugar with a hand mixer until creamy. Whip the heavy cream with the hand mixer until stiff.
Stir the chocolate and one-third of the whipped cream into the egg mixture, then gently fold in the remaining whipped cream. Spoon the mousse and pomegranate compote into 2 dessert glasses and chill for about 4 hours.
Decorate with grated chocolate, pomegranate seeds, and mint leaves before serving.
Tip: The compote can also be served separately as a sauce with the mousse. Enjoy this delightful and elegant dessert!
