George Washington: Hoecakes
These crispy-edged, tender cornmeal pancakes were a favorite of America’s first president, George Washington. Hoecakes, a staple of early American cooking, were simple yet satisfying, made from cornmeal, water, and a touch of salt, then cooked in butter or lard. The light sweetness of honey and rich butter made these simple pancakes a hearty, comforting start to the day, proving that even the father of the nation enjoyed a little indulgence in the morning!
Ingredients (for 4 servings):
- 1 cup cornmeal
- ½ tsp salt
- 1 cup boiling water
- 2 tbsp unsalted butter, melted (plus more for cooking)
- ¼ cup milk
- 1 tbsp honey (plus more for serving)
Instructions:
- In a bowl, mix the cornmeal and salt. Slowly pour in the boiling water, stirring until combined. Let sit for 5 min.
- Stir in the melted butter, milk, and honey to form a thick batter.
- Heat a skillet over medium heat and melt a little butter.
- Spoon small amounts of batter onto the skillet, flattening slightly. Cook for 2-3 min. per side until golden brown.
- Serve warm, drizzled with honey and more butter
