Artichoke Omelet

This simple yet elegant omelet brings together tender artichoke hearts, fresh herbs, and creamy cheese in a single pan for an effortless meal. Light yet satisfying, it’s perfect for a quick breakfast, brunch, or even a last-minute dinner. Serve it straight from the pan with a side of greens or crusty bread. This one-pan artichoke omelet is light, flavorful, and requires minimal effort—perfect for a no-fuss yet delicious meal.

Ingredients (for 2 servings):

  • 4 large eggs
  • ¼ cup milk or dairy-free alternative
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • ½ cup canned or jarred artichoke hearts, drained and chopped
  • ¼ cup crumbled feta or grated Parmesan (optional)
  • 1 tbsp chopped fresh parsley (optional)
  • ½ tsp red pepper flakes (optional)

Instructions:

  1. In a bowl, whisk together eggs, milk, salt, and pepper. Set aside.
  2. Heat olive oil in a nonstick skillet over medium heat. Add chopped artichoke hearts and sauté for 2-3 min until slightly golden.
  3. Reduce heat to low and pour in the egg mixture, tilting the pan to spread evenly.
  4. Sprinkle feta (or Parmesan), parsley, and red pepper flakes over the top. Cover and cook for 5-7 min, or until eggs are set.
  5. Slice and serve warm, either folded or open-faced.
