Mushroom and Spring Pea Orzo

This simple yet flavorful one-pan pasta is packed with fresh spring peas and savory mushrooms, creating a dish that’s both light and satisfying. The orzo soaks up a delicate, zesty broth, making every bite creamy without the need for heavy sauces. Comforting and full of fresh flavors, this one-pan meal is an effortless way to enjoy the taste of spring.

Ingredients (for 4 servings):

  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 small shallot, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup orzo
  • 2 cups vegetable broth
  • ½ cup peas (fresh or frozen)
  • Zest of 1 lemon
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ cup grated Parmesan (optional)
  • 2 tbsp fresh parsley, chopped

Instructions:

  1. Heat olive oil and butter in a large skillet over medium heat. Add shallot and garlic, sautéing for 2-3 min. until fragrant.
  2. Stir in mushrooms and cook for 4-5 min. until softened.
  3. Add orzo and toast for 1 min., then pour in vegetable broth. Bring to a simmer and cook for 8-10 min., stirring occasionally.
  4. Stir in peas, lemon zest, salt, and pepper. Continue cooking until orzo is tender and most of the liquid is absorbed.
  5. Sprinkle with Parmesan (if using) and fresh parsley before serving.
