Melon jam

Have you ever had melon jam before? It's delicious on a slice of whole-wheat toast for breakfast! To make this jam from scratch, start by peeling, seeding and dicing 2 melons, then add them to a pot. Add 1 1/2 pounds sugar, 1 lemon cut into quarters and boil for 15 minutes. Reduce the heat to a low simmer and cook for another 40 minutes. When done, add to sterilized jam jars and flip upside down to seal.
