Cake flour

You can replace 1 tablespoon cake flour with 1 1/2 tablespoons cornstarch or potato starch. To make a cream, 2 egg yolks carefully incorporated while cooking will help it thicken (as is the case with custard, for example, which is better with flour but can be made without). If you only have all-purpose flour, sift it in order to achieve pastry flour consistency and add 1 1/2 teaspoons baking powder + 1/2 teaspoon salt.
