Here's a refreshing alternative if you're not in the mood for hot soup. To the bowl of your blender, add 1 diced bell pepper, 1/2 cucumber with the seeds, diced tomatoes, 1 clove of garlic, a pinch of salt, 1 tablespoon white wine vinegar, a pinch of Cayenne pepper, 2 slices of sandwich bread and 1/2 cup olive oil. Pulse gently, then increase the speed until the mixture is smooth. Serve chilled.
