Raisin bread French toast cake

For this French toast 'cake', cut 8 ounces stale bread into pieces and place in a baking dish, then sprinkle with 2/3 cup raisins. Mix together 1 cup cream, 1 cup milk, 1 egg and 1/4 cup sugar. Pour the mixture over the dish and set aside for 30 minutes. Bake at 350 °F for 25 minutes and serve sliced with an easy custard sauce made with sugar, egg yolks and heated milk.

Method

  1. Slice an avocado in half.
  2. In a bowl, combine avocado with half an onion (diced) and coriander. 
  3. Add the juice from half a lemon and some salt, and mix.
  4. Cut a sweet potato into 1/2 inch slices.
  5. Place in a toaster, making sure to toast both sides. 
  6. Spread the avocado mix onto the toast. Enjoy!
