3. Don't overwork the meat

Whatever you do, do not "overhandle" the meat when shaping the patties. You shouldn't really even touch the meat preparation until you're going to start forming them into burgers. Then, pack them loosely and gently, so as to prevent them from becoming too compact and cooking up dry and tasteless.
