8. Don't pick the wrong-sized buns

Too much meat and not enough bread or too much bread and not enough meat are recipes for burger failure. Ideally, your burger will be 6 ounces, and you'll want a bun that measures up to its cooked counterpart. Also, go for soft yet sturdy-ish textures. Brioche buns work well here, as do kaiser rolls (as long as they're not too bready).
