Prepare the dough

Degas the dough on a lightly floured surface, then divide into 6 equal portions. Work on one piece at a time, and cover the rest with plastic wrap. Sprinkle the dough with a little flour so it's not too sticky, then roll it out to about 0.4" thickness.
