If you have a double sink, transform it into an instant scraps bin. Place a large chopping board over one of the sinks, and slide scraps directly into the other as you are chopping. If you don't have a double sink, always keep a container (an old ice cream tub is perfect) or bag handy to throw scraps into, which will reduce your clean up time considerably.
