Cooking times and temperatures

The ideal cooking temperature is between 320-350 degrees Fahrenheit.

Once your roast is nicely browned, you should count 20 to 30 minutes per half pound of meat. You can determine how cooked your roast is by touching it: the more well-done it is, the harder it will feel. A rare roast should have the same consistency of the fleshy bit of your thumb when your hand isn't clenched.
