Lots of bacon on the menu at this popular Chicago gastropub, which also features a large seasonal beer garden. To start, you can get the gourmet bacon board, with four different types of gourmet bacon, house mustard and Italian bread toasts. Other bacon-centric creations include the bacon grenades (deep-fried, beer-battered meatballs wrapped in bacon), and bacon-wrapped dates. There's also the extreme option: a 5-lb shareable spicy beef and pork sausage stuffed with pepper bacon and wrapped in a brown sugar bacon weave, then cooked slowly for hours on the smoker and served with fries, plus buns and veggie fixings to assemble as you please (feeds 6 to 8 people).

INGREDIENTS

  • Blue cheese
  • Cheddar cheese
  • Mozarella
  • 1 baguette
  • Sun-dried tomatoes
  • Bacon

METHOD

  1. Cut your cheeses into thin slices
  2. Slice baguette down the middle (like a sandwich)
  3. Layer cheddar, blue, and mozarella cheese inside the bread
  4. Top with sun-dried tomatoes
  5. Close baguette and wrap with bacon strips
  6. Put in oven and bake for 20 minutes at 350 degrees
  7. Slice and serve!
