Flaxseed

A "flaxseed egg" isn't really an egg at all, but it's surprisingly easy to make: just mix together one tablespoon of freshly ground flaxseed with three tablespoons of water. This substitute is very dense and won't help fluffier types of baked goods to rise, but its moisture is ideal for things like brownies, muffins, or pancakes. Not to mention the seeds contain a number of health benefits!
