Instant Mashed Potatoes

Instant potato flakes are good for more than last-minute mashed potatoes. To replace eggs with this starchy alternative, just use two generous tablespoons per egg needed. This works best with denser recipes, although if you need a bit of additional moisture you can alternatively mix the flakes with 2-3 tablespoons of water first.

Cornstarch, arrowroot, or other similar starches can also be used instead of potato flakes.
