Fresh Or Frozen?

If a turkey is labeled "fresh", that means it has never been chilled at lower than 26°F (the freezing point for turkey). These turkeys should only be refrigerated and for no more than a couple days, so if you buy one of these, don't do it too far in advance.

Frozen turkeys are, as can be expected, stored in a frozen environment. These are generally the cheapest and can be kept the longest, but the defrosting process can be long: you should move it from the freezer to the refrigerator at least 3 days in advance (it can take up quite a lot of space!). Keep in mind, too, that the bigger your turkey is, the more time it will need to defrost.
