Never Store Eggs In This Part Of The Fridge

WHY DO WE WASH OUR EGGS?

For one, food hygiene and safety is regarded quite differently around the world. For example, French people grow up eating steak tartare, which is a totally raw beef dish. While you can find it on some fancy restaurant menus in the US (or slightly seared), it's not one of the most popular imported French foods. This is probably due to the fact that Americans seem to prefer their beef somewhat overcooked. According to Five Thirty Eight, which analyzed a year's worth of steak ordering data from the Longhorn Steakhouse chain, only 23% of Americans order their steak medium-rare. 

No cause was given, but it might be due to the fear of foodborne illnesses associated with consuming raw or undercooked meats. Eggs are part of that "consumer warning," which also makes their storage a food safety concern. Likewise, the fear of salmonella plays a role in egg washing and thus leads us to refrigerate our eggs to protect against contamination.

Ingredients

Makes 6

  • 1/2 cauliflower head
  • 8 eggs for cauliflower mix
  • Pepper
  • Salt
  • 4-6 cups shredded cheese
  • 6 slices salami
  • 6 tbsp pizza Sauce

 

Method

  1. Boil diced cauliflower in salted water until tender.
  2. Blend, then transfer to mixing bowl.
  3. Mix in 2 eggs, pepper and 2 cups of shredded cheese
  4. Share the cauliflower mixture out between 6 ramekins, forming little cups
  5. Add 1 cup of shredded cheese
  6. Bake for 25 min at 375°F
  7. Add a slice of salami, a tbsp of pizza sauce, and one raw egg to each ramekin
  8. Top with cheese and return to oven for 7 min at 375°F
  9. Serve, and enjoy!
