If you have a well-stocked grocery store near you, this may not be a big problem, but it's best to confirm ahead of time that you have access to everything you need before it comes time to buy the ingredients and start cooking.

Seasonal fruits and vegetables, items that might go out-of-stock easily, and any non-standard ingredients that your recipe might call for will be the things to look out for the most. If you'll need to make a trip to any specialized stores (such as international food markets or wine shops), it's also a good idea to make a note of their opening days and times, so you don't end up waiting until the day itself only to find out they're closed.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
