Overspiced Curry

Unless you're a spice fiend who loves the numbing sensation that comes with fiery food, you might want to go easy on the heat, especially when cooking for other people. If you went a little overboard with the hot curry paste, try adding more coconut milk, Greek yogurt or cream. Fatty components help tone down the spiciness. You can also tame the dish by adding more acidity with citrus or vinegar, or sweeten it up with sugar (don't add too much). Pairing a bowl of hot curry with plain cooked rice is also a good way to diffuse the spiciness.
