While sushi has grown steadily in popularity, poke—a traditional Hawaiian raw seafood dish—has shot straight up to the top. Seemingly overnight, poke bowls popped up on restaurant menus, and spots completely devoted to the dish had lines out the door. Composed of marinated raw fish, pickled vegetables, avocado, and rice, poke's fame has finally reached the mainland.
