The Sun Also Rises: La Rotonde, Paris

In Ernest Hemingway's The Sun Also Rises, protagonist Jake Barnes laments the popularity of La Rotonde in Paris' Montparnasse neighborhood. In real life, the cafe was a favorite of Hemingway's, and likewise frequented by Pablo Picasso, Henry Miller, Gertrude Stein, T.S. Elliott, Marc Chagall, Diego Rivera, among others. It remains a popular fixture in Paris today, where you can order a wide range of typical Parisian dishes, including foie gras, snails, beef tartare and French onion soup, in addition to huge platters of fresh seafood.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
