Miss Chiquita

Known to some as the First Lady of Fruit, this festive banana became the face of United Food Company (now Chiquita Brands) in 1944. Originally, she was depicted as an actual banana, but that changed when Pink Panther artist Oscar Grillo turned her into a woman. She has inspired banana-lovers everywhere, including designer Charlotte Olympia, who included Miss Chiquita in her 2017 line of shoes.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!

INGREDIENTS:

  • 2 chicken breasts
  • 1/2 cup of tomato sauce
  • 1/2 cup of chives, chopped
  • 1 tsp. of Mexican spice mix
  • 4 Tortillas
  • Cheddar
  • Salt, to taste

METHOD:

  1. Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
  2. Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
  3. Fold up tortillas, and heat in a frying pan until golden.
  4. Enjoy!
