Prepare Beef Properly

When it comes to beef stir fries, nothing is worse than ending up with that tough, chewy, overcooked texture. To avoid this, you need to prepare the meat with care. For the best, juicy and tender stir-fried beef, start by cutting long strips along the grain (trust us on this). Then you're going to cut those strips across the grain at a 45° angle, into smaller, bite-size pieces. This makes it easy to season, and you don't even need to marinate stir-fry meats for long. Simply add a splash of soy sauce, then season with salt and pepper and combine with garlic and/or ginger. Coat the meat with cornstarch, and drizzle over a bit of sesame oil to prevent sticking. That's really all it takes.
