Champagne and Chili

Rich, meaty (or vegetarian) chili actually does quite well with champagne, as long as it's not too spicy. Champagne's acidic nature can tame heat to a certain extent, but you'll to avoid brut varieties, which lack the necessary sweetness to do so. If your chili is particularly tomato-y, champagne also helps counterbalance its acidity.
