Champagne and Mac & Cheese

Who says you can't be fancy while eating a bowl of mac & cheese? Again, this combo works because of the high fat content in mac and cheese, which is nicely balanced by the acid content in champagne. Instead of reaching for the boxed stuff, though, whip some up yourself using creamy, milder cheeses. If you do opt for a sharper cheese like cheddar, use only enough to provide flavor but not so much that it overtakes the other cheeses.
