Champagne and Spring Rolls

Though they are the opposite of their fried counterparts, the combination of raw ingredients in fresh spring rolls with a fiery dipping sauce really shines when paired with a sweet bubbly. Sweeter is better because it has less acid than a brut, for example, and it will also help tame the heat.
